Hi

Where can I find the option in the chartplotter to leave a trail/breadcrumbs on the screen so I can better see my drifts while fishing?

From within the Chart application, the command sequence MENU->WAYPOINTS, ROUTES, TRACKS->TRACKS->START TRACK may be used to start a track. More information concerning the Tracks feature may be found within Section 7.3: Tracks of the LightHouse 3.3 Advanced Opeartion Instructions.
