The difference can more easily be understood when looking at the difference in images,
The Downvision image is the more copper tone (standard palette) and shows the structure of the seabed in great detail, individual fish show up as round dots, whereas the conical sonar shows the more traditional view with individual fish showing as arches.
The view in these pictures below of a submarine on the seabed indicate the greater level of detail available from the downvision
