Since I no longer have use for the yellow center plug on a ST converter kit (eliminated C80 for Axiom) can the yellow plug be used as a white plug for ST1 purposes?

Negative. The SeaTalk (yellow) socket of a SeaTalk to SeaTalkng Converter is exclusively designed to support SeaTalk or limited NMEA 0183 communications.
