Yes, this old thing.

If the company is no longer producing it, has anyone tried reproducing it via one of the open code platforms, cloning it by re-building one from the schematics (and mystery mircroprocessor code) or digging them out of the recycle bin?

I understand all it does (or can do) is listen for a XTE sentence (0183) and then issue a command to the Autohelm by "pressing its buttons" by shorting a relay. The appropriate button, of course, +1 / -1 and so on.

The older Autohelm 1000 with a 4 pin plug on the underside was pre SeaTalk and the only way to connect NMEA to it is via an interface box, part number Z075. This was called the Radio navigation interface, was 4" square and had a rotary knob on the front as well as a red and a green LED. Unfortunately, this autopilot design predates Raymarine. Unfortunately, support for this product has not existed for many, many years. Best wishes with your search.
