I have an e95 MFD chartplotter and I could have sworn the COG vector used to be bright green or yellow? I see where I can make it wide but can I change the color so it stands out more?

Welcome to the Raymarine Forum Scott,
Prior generations of MFDs and possibly very early software for the a/c/e-Series MFDs feature a bright green COG vector. However, within MFDs running the latest LightHouse II software software, the COG vector is colored hunter green and the heading vector is colored magenta. The colors used for these vectors is not user configurable.
