When the autopilot goes from Auto to Standby without moving it, is usually due to lack of power to the autopilot. Check the voltage to the back of the ST5000 input.

as for the heading im not 100% sure but think it stayed the same, fishing Saturday and will check

The heading stays the same when hitting the trim tabs, it changes once the course direction is in a different direction
